Non Greasy Fried Fish
Cut fillets into sections not more than about 1 to 1 1/2 inches thick. (for faster more even cooking) In a bowl mix approx: 1 1/2 c. bread crumbs and 1/4c flour. (flour helps keep bread crumbs from browning too fast) Add garlic salt and pepper to taste. Rinse fish in cold water, don't dry. Season fillets with the same. Place each piece in bread crumbs, coat thoroughly, press coating on firmly. Remove to a large plate. Repeat for all. Next dip breaded fillets in milk. Recoat with bread crumbs and they are ready to fry. Cook until golden brown. Remove and drain on paper towels. (crispy not greasy, also prevents coating from sliding off fish when eating).
