Stuffed Flounder
Fillet or have filleted your flounder of choice. As follows. The top side should be cut down the center lengthwise and filleted into 2 pieces and skinned. The bottom (white side) should be filleted in one piece skin left on. Stuffing for 2 fish: 1 c crab meat. 2 tbls onion, celery and red bell pepper, diced small. Add about 1/4c. mayonnaise 1/2tbls of lemon juice 1/2 tsp Old Bay salt and pepper to taste. Stir well. Add about 1/2 to 1 cup bread crumbs. Use your judgment not too wet or too dry. Place bottom fillet on buttered baking sheet or other pan. Place 1/2 the stuffing on mounded up, leaving the outside edges clean. Place each top fillet back on as it came off (thick end, front and middle) brush with butter, salt and pepper, bake approx 20 mins in 375 oven. Don't over cook it - Dry fish yuk.
